Low-Carb Chocolate Pudding Pie (Edit recipe)

This low-carb chocolate pie is made with our brand new Sweet Phat Crumbs and an easy, homemade chocolate pudding that makes a delicious pie filling! The Sweet Phat Crumbs are the perfect graham cracker crumb alternative. Who doesn't want to devour healthier, zero sugar graham cracker crumbs?! We sure do! Mix them with a little butter and it makes a crunchy, sweet pie crust! Top that with a smooth and creamy chocolate layer and some vanilla whipped cream and you have a dessert fit for a queen. This dessert is full of healthy fats, extremely low in carbs, is gluten free and contains no sugar.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix together Phat Crumbs and melted butter until thoroughly combined. Press into desired serving dish (we used an 8 in. pie dish). Place in freezer while you prepare the pudding and whipped cream.
  2. In a medium pot, heat the coconut milk, chocolate pieces and sweetener over medium heat, stirring until the chocolate is melted. This should take 1-2 minutes.
  3. Turn the heat off and whisk the mixture with a hand whisk until very smooth. Cover and refrigerate.
  4. Place all ingredients in a medium bowl or stand mixer and whip on high until soft peaks form. *see notes
  5. Remove the pie crust from the freezer. Place desired amount of chocolate pudding in the crust and flatten with a spatula. Add your whipped cream layer and top with a sprinkle of Sweet Crumbs or chocolate shavings. Enjoy!

Notes

*Pre-chilling the mixing bowl and blades will aid in whipping the cream.
