Fresh Fiesta Dip
This Fresh Fiesta dip is made up of layers of creamy refried beans, spiced sour cream, avocado, cheese, fresh cilantro, tomatoes, olives and more! Best scooped up with a crisp & salty tortilla chip.
Ingredients
- 32 oz32 oz32 oz Refried Beans
- 16 oz16 oz16 oz Sour Cream
- 222 Chipotle Peppers in Adobo Sauce, chopped finely
- 1 cup1 cup1 cup Cilantro, chopped finely
- 333 Avocado, chopped
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice, from 1 lime
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 bunch1 bunch1 bunch Green Onion (Scallion), sliced thinly on the bias
- 1 pint1 pint1 pint Tomato, Grape, quartered
- 6 oz6 oz6 oz Black Olives, drained, 6.5oz dry weight can
- 8 oz8 oz8 oz Cheddar Cheese, grated, or mexican mix cheeses
- 1 bunch1 bunch1 bunch Plantain Chips, or Tortilla chips for serving
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl, combine the avocados, cilantro, lime juice, salt & pepper. Set aside.
- In another bowl, combine the scallions, tomatoes and black olives. Set aside.
- In a third bowl combine the sour cream and the chipotles. Set aside.
- On a large platter spread the refried beans in an even layer. Spread the sour cream mixture on top of the beans.
- Then spread the avocados on top of the sour cream layer.
- Sprinkle the shredded cheese on top and decorate with the tomato and olive mixture. Serve with your favorite tortilla chips or plantain chips. We also make chicken, fish and steak tacos with the dip as the fillingu2026. Super yummy!
