Garlic Bread Meatball Marinara Sammies
Move over Subway, there's a new meatball sub in town and it's vegetarian & delish! Juicy, Impossible meatballs, marinara, & melty cheese, served up on a grilled, garlic bread baguette. So addictive! Serve as sammies 0r sliders!
Ingredients

- 6 pieces6 pieces6 pieces Mozzarella, sliced pizza mozzarella from the ball
- 340 grams340 grams340 grams Plant-Based Ground Beef - Impossible
- 0.5 whole0.5 whole0.5 whole Yellow Onion, finely diced
- 0.25 cup0.25 cup0.25 cup Brown Rice, cooked & cooled
- 2 Tbsp2 Tbsp2 Tbsp Parsley, finely chopped
- 2 cloves2 cloves2 cloves Garlic, crushed & minced
- 6 pieces6 pieces6 pieces Basil, Fresh, small handful, chopped
- 0.25 cup0.25 cup0.25 cup Grana Padano Cheese, finely shredded
- .25 tsp.25 tsp.25 tsp Himalayan Pink Salt
- .25 tsp.25 tsp.25 tsp Red Pepper Flakes
- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, To Taste
- 0.25 cup0.25 cup0.25 cup Butter, Unsalted, room temp
- 4 cloves4 cloves4 cloves Garlic, Use your garlic press OR very finely mince
- 3 Tbsp3 Tbsp3 Tbsp Parsley, finely chopped
- 1 whole1 whole1 whole Red Pepper Flakes, See Recipe
- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe
- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe
- 1 whole1 whole1 whole Basil, Fresh, Fresh For Garnish
- 1 whole1 whole1 whole Grana Padano Cheese, Finely shredded for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix together the room temp butter, garlic, parsley, and a good pinch of salt, pepper, and pepper flakes. Cover and refrigerate until needed.
- Warm up the marinara in a covered pot set to low. Leave covered until needed.
- M E A T B A L L S - Preheat oven to 400 F. Mix all of the ingredients together in a small mixing bowl. Using about 2 Tbsp. of the meat mixture, form in to 8 equal sized meatballs and transfer them to a parchment lined baking sheet sprayed with cooking spray. Bake 15 - 20 minutes, flipping once or twice as needed until browned and cooked through.
- With 10 minutes remaining on the meatballs, toss your baguette in to the oven for 4 -5 minutes to warm up. Remove and carefully cut in to two equal sized sammies. Slice them open and slather both sides in the garlic butter. Reserve any extra butter for a future use.
- Preheat a grill pan set to just about medium and grill the baguettes butter side down until golden brown and buttery perfection.
- Place the bottoms on a parchment lined baking sheet and arrange 4 meatballs on each bottom baguette. Top with the sliced mozzarella and spoon some of the hot marinara on top. Switch the oven to BROIL 500 F / HIGH and toss them in until the cheese is bubbly and melted. Remove and carefully transfer the bottoms to a cutting board for assembly. Spoon additional sauce over the meatballs and sprinkle on some torn basil and finely shredded grana padano. Pop on the tops of the baguettes.
- S E R V E - Slice them in to 8 equal sized sliders for service, or serve as two stuffed sammies. Serve the sammies with any remaining tomato sauce for dipping. ENJOY!
