Garlic Rosemary Steak Bites with Truffle Butter
These steak bites are packed with savory flavors from garlic, rosemary, worcestershire sauce and a touch of truffle butter for extra richness. I used a cast iron skillet for high-heat indoor cooking, but an indoor grill pan works well too. Simple to make yet loaded with flavor.
Ingredients
For the Steak
- 1 lb1 lb1 lb KC Strip Steak - Bachman Family Farms
- 2 Tbsp2 Tbsp2 Tbsp Garlic Oil - Kosterina
- 1/2 tsp1/2 tsp1/2 tsp Worcestershire Sauce
- 3/4 tsp3/4 tsp3/4 tsp dried Rosemary
- 3/4 tsp3/4 tsp3/4 tsp Salt, adjust to taste
- 3/4 tsp3/4 tsp3/4 tsp Black Pepper, adjust to taste
For the Truffle Butter
- 2 Tbsp2 Tbsp2 Tbsp Salted Butter, softened (not melted)
- 1/8 tsp1/8 tsp1/8 tsp White Truffle Salt - Texas Salt Co., adjust to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- About 30 minutes before you’re ready to cook, take the steak out of the fridge and let it rest at room temperature. Cut it into 1-inch cubes for even cooking, removing any fat caps, if desired.
- In a large bowl, combine steak cubes, garlic oil, worcestershire sauce, rosemary, salt, and pepper. Toss to coat, then let sit for 15-20 minutes.
- While the steak marinates, mix softened butter with truffle salt in a small bowl and set aside.
- Preheat a griddle or grill pan over medium-high heat. Arrange steak cubes in a single layer (work in batches if needed) and cook for 3-4 minutes per side until browned and cooked to your preferred doneness.
- Transfer steak bites to a serving dish and top each with a small amount of truffle butter, allowing it to melt over the hot bites. Serve warm and enjoy!
Notes
Before cooking, let the steak rest at room temperature for about 30 minutes. Then, marinate it for at least 20-30 minutes to infuse all those flavors. This simple prep makes a big difference in tenderness and taste. You can always add more salt and pepper at the end if you like even more seasoning!
