Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350°F and lightly grease an 8-inch oven-safe skillet (cast iron works best).
  2. In a small bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, and salt.
  3. In a separate bowl, mix almond butter, molasses, maple syrup, egg, and vanilla until smooth.
  4. Add the dry ingredients to the wet and stir until just combined, the dough should be thick and sticky.
  5. Fold in diced apples (and pecans or chocolate chips if using).
  6. Spread the dough evenly into your skillet and smooth the top.
  7. Bake for 20–25 minutes, until the edges are golden and the center is just set.
  8. Let cool slightly, then top with flaky salt, a drizzle of almond butter, or a scoop of vanilla ice cream for serving.

Notes

Add a pinch of cardamom or nutmeg for extra fall flavor.
