Gluten Free Beef & Macaroni
This is total and complete comfort food. I hadn’t slept well the previous night and for dinner all I wanted was something that was yummy, filling, and comforting. Nailed it. Hope you enjoy too.
Ingredients
- 10 oz10 oz10 oz Gluten-Free Elbow Pasta - Jovial Foods, or any brand you like

- 1 lb1 lb1 lb 75% Lean Ground Beef with Heart, Kidney, Liver - US Wellness Meats, or any ground beef you like

- 2 tsp2 tsp2 tsp Organic Everyday Extra Virgin Olive Oil - Kosterina, or lard, ghee, avocado oil

- 1 tsp1 tsp1 tsp Sea Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

- 1 tsp1 tsp1 tsp Paprika

- .5.5.5 Onion, diced
- 222 Celery, diced
- .5.5.5 Bell Pepper, any color, diced
- 2 cloves2 cloves2 cloves Garlic, Minced

- 2 oz2 oz2 oz Cream Cheese, Full Fat
- .5 cup.5 cup.5 cup Tomato Sauce
- 2 cups2 cups2 cups Beef Bone Broth, or beef stock

- 2 cups2 cups2 cups Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a pot add water and cook the macaroni according to instructions.
- When done drain water and set aside.
- While the pasta cooks in a large skillet on medium heat cook the beef in oil, with salt, pepper, and paprika.
- Break apart as it cooks. Let cook about 8 minutes.
- Add the onion, celery, bell pepper, and garlic. Let cook for 5 minutes.
- Add the cream cheese, tomato sauce, and beef broth/stock.
- Stir and let cook for 5 minutes. Stir periodically.
- Add the cheese and macaroni stir and turn heat to low. Let cook for 4-5 minutes until cheese melts and flavors meld.
- Serve and enjoy.
Notes
You can use ground pork as well and the ground beef can just be 100% ground beef if you don’t have the offal blend. If you want to add 1 tsp of Italian seasoning that is good as well. If you want more veggies some ideas as broccoli cut up very small, diced zucchini, and a minced jalapeño if you want a little spice. Have fun with the dish and experiment how your family prefers it.
