Gluten free Yuzu cookies
Yuzu is an Asian citrus fruit that can be used like you would a lemon. It is fresh and tart. Perfect for summer.
Ingredients
- 8 oz8 oz8 oz Butter, Salted, room temperature

- .5 cup.5 cup.5 cup Coconut Sugar

- 1 Tbsp1 Tbsp1 Tbsp Milk

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1.75 cups1.75 cups1.75 cups Gluten-Free All-Purpose Flour - Primal Palate

- 1 tsp1 tsp1 tsp Baking Soda
- .25 tsp.25 tsp.25 tsp Salt

- 111 Lemon Zest
- 111 Egg, room temperature
- 1 cup1 cup1 cup Powdered Sugar, sifted
- 2 tsp2 tsp2 tsp Yuzu Syrup - Portland Syrups

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the butter, sugar, vanilla, and milk to stand mixer bowl.
- Using paddle attachment blend until smooth.
- In a separate bowl combine the flour, baking soda, salt, and zest. Stir.
- Slowly add about half of the flour mixture and turn paddle on low.
- Add the egg, keep blending.
- Add the remaining flour blend, Mix until incorporated.
- The dough will be quite dry. Put into a plastic bag or wrap and refrigerate for 30 minutes.
- Preheat oven to 350 degrees.
- Put a piece of parchment paper on cookie sheet.
- Using a spoon or scoop make small balls and place on cookie sheet.
- Slightly press down.
- Bake for 10-12 minutes.
- Let cool.
- In a small bowl blend the glaze ingredients.
- When cookies are cool use a small spoon and put glaze on top.
