Golden Cauliflower Soup
This time of year, my body is calling for all things nourishing, and this Golden Cauliflower Soup hits the spot like no other. Not only is it packed with anti-inflammatory, gut-loving ingredients and warming spices, but it's also super cozy and satisfying! It's simply the perfect way to heal yourself from the inside out and embrace a little extra glow this season.
Ingredients
- 1 head1 head1 head Cauliflower, cut into florets
- 1 whole1 whole1 whole Yellow Onion, diced
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Lemon Juice
- 3 cloves3 cloves3 cloves Garlic, minced
- 2 Tbsp2 Tbsp2 Tbsp Ginger Root, peeled & minced
- 2 tsp2 tsp2 tsp Turmeric, ground
- 2 tsp2 tsp2 tsp Cumin, Ground
- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 cup1 cup1 cup Cashews, Raw
- 4 cups4 cups4 cups Bone Broth, can sub chicken or veggie broth
- 1 bunch1 bunch1 bunch Green Onion (Scallion), (chopped) and fresh cilantro, for topping
- 15 oz15 oz15 oz Chickpeas, 1 can
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Cumin, Ground

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- To make the Crispy Chickpeas, preheat oven to 425 degrees. Rinse and drain chickpeas. Dry chickpeas completely. Place chickpeas on a parchment-lined baking sheet. Drizzle with olive oil and salt. Bake for 25-30 minutes, stirring a couple of times, until golden and crispy. While warm, toss in paprika and cumin.
- Mean while start the soup by adding olive oil, cauliflower, onion, cashews and a pinch of salt and pepper to a large soup pot or dutch oven. Cook down for ~10 minutes, until veggies are softened.
- Add garlic, ginger, turmeric, cumin, paprika and additional salt and pepper to taste. Cook for 2-3 minutes.
- Pour in bone broth and lemon juice, bring to a simmer, and simmer for 10 minutes.
- In batches, add soup to a blender, and blend until smooth and creamy.
- Serve with a sprinkle of the Crispy Chickpeas, green onion, and cilantro. Enjoy!
