Grain-Free Matcha Muffins
One bite of these muffins and you'll be saying, "I love these so matcha!" This grain-free, gluten-free recipe is great all by itself or with the addition of dark chocolate chips or tangy blueberries!
Ingredients
- 120 grams120 grams120 grams Cassava Flour (Certified Non-GMO) - Otto’s Naturals, (about 1 sifted cup or 3/4 cup unsifted)
- 1/2 cup1/2 cup1/2 cup Granulated White Sugar, 115 grams (or coconut sugar, which will make a darker muffin)
- 1/2 tsp1/2 tsp1/2 tsp Grain-Free Baking Powder - Otto's Naturals
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 111 Egg
- 1/2 cup1/2 cup1/2 cup Avocado Oil
- 1.5 tsp1.5 tsp1.5 tsp Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Water
- 1 Tbsp1 Tbsp1 Tbsp Matcha Green Tea Powder, ceremonial-grade
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F. Line a muffin tin with 6 paper liners.
- In a medium-sized bowl, whisk together the cassava flour, sugar, baking powder, and salt.
- Add in the egg, oil, vanilla, and water. Mix well to combine.
- If adding in bananas or berries, fold in at this step (see notes).
- Distribute batter evenly between muffin liners.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Muffins with added fruit will need longer time.
- Allow to cool before eating.
- Enjoy!
Notes
For Banana: add ½ cup mashed ripe banana and 1 ½ teaspoons cinnamon. For Blueberry or Chocolate Chip: add ½ cup mix-ins
