Green Banana Bread Muffins
What makes them green? Spinach of course!! These hidden veggie breakfast muffins are perfect for the kids. They have a TON of spinach in them, and all the good nutrients to start their day. The kids love them!

- 2 whole2 whole2 whole Eggs
- 3 cup3 cup3 cup Spinach
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1.5 cup1.5 cup1.5 cup All Purpose Flour
- 4 Tbsp4 Tbsp4 Tbsp Flaxseed Meal
- 1 tsp1 tsp1 tsp Baking Powder

- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 cup1 cup1 cup Mini Chocolate Chips, Semi-Sweet

- Preheat your oven to 350 degrees.
- Grease a mini muffin pan, and set aside.
- In a blender, add your banana, eggs and spinach. Blend until it becomes smoothie like. Pour into a mixing bowl and add all of your other ingredients. Stir together until the batter is formed. Fold in chocolate chips!
- Pour into the mini muffin pan and place in the oven. Bake for 15-18 minutes.
