Hidden Veggie Muffins
Yes, there is an entire zucchini in these muffins and no your kids will not know it. These muffins are perfect to add to the weekly line up. You can make them for an easy breakfast or a grab and go snack. They’re sweetened with applesauce and bursting with flavor from the chocolate chips! Definitely a crowd favorite!
Ingredients
- 1 whole1 whole1 whole Zucchini
- 2 whole2 whole2 whole Eggs
- 1 cup1 cup1 cup Applesauce, Unsweetened
- 1 cup1 cup1 cup Whole Wheat Flour
- 1.5 tsp1.5 tsp1.5 tsp Baking Powder
- 2 tsp2 tsp2 tsp Cinnamon, Ground
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 cup1 cup1 cup Baking Chocolate Chips

- Zucchini Chocolate Chip Muffins
- 1 Zucchini
- 2 Eggs
- 1 C of applesauce
- 1 C of whole wheat flour
- 1.5 tsps of Baking Powder
- 2 tsps of Cinnamon
- 1 tsp of Vanilla Extract
- Chocolate Chips
- Preheat oven to 350 degrees.
- In a blender, add the zucchini (peeled if desired), eggs and applesauce. Blend until it becomes creamy. Add to a bowl.
- Next, add in the flour, baking powder, cinnamon, and vanilla extract. Stir together until it’s all mixed together.
- Fold in chocolate chips.
- Pour into a greased mini muffin pan and place in the oven. Bake for 12-15 minutes. Cool and enjoy!
Notes
If you want the muffins to be a big sweeter for your kids, add in 1/4 C of maple syrup, honey, agave, coconut sugar or any sweetener of choice!
