Ground Beef Fajita Enchiladas
I love easy and delicious dinners! This one is perfect for your busy weeknight meal prepping. Make a day ahead for a very easy dinner that you only need to throw in the oven and bake. ENJOY!
Ingredients
- 1 lb1 lb1 lb 85% Lean Ground Beef - US Wellness Meats

- 0.25 cup0.25 cup0.25 cup Bell Pepper, Green Pepper, Diced
- 0.25 cup0.25 cup0.25 cup Bell Pepper, Red Pepper, Diced
- 0.5 cup0.5 cup0.5 cup Corn
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Paprika

- 1 tsp1 tsp1 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Coriander, Ground
- 1.5 tsp1.5 tsp1.5 tsp Cumin, Ground

- 0.5 cup0.5 cup0.5 cup Salsa
- 15 oz15 oz15 oz Red Enchilada Sauce - Siete Foods

- 101010 Maiz Blue Corn Tortillas - Siete Foods, Any corn tortilla will work
- 1.5 cups1.5 cups1.5 cups Cheddar Cheese, Or Mexican Cheese, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large frying pan brown the beef on medium low heat.
- Drain grease.
- Add the peppers and corn into the beef. Mix well.
- In a small mixing bowl combine chili powder, paprika, salt, garlic powder, onion powder, coriander and cumin.
- Add the taco seasoning and salsa to the beef. Mix well.
- Pour half of the enchilada sauce to the bottom of a baking dish.
- Make the enchiladas by adding 3 Tablespoons of the beef to each tortilla.
- Roll the tortillas and place them in the baking dish.
- If the corn tortillas break, then you can cover them with a very wet paper towel and microwave for 30 seconds to soften them up.
- Top with any leftover meat, the remaining enchiladas sauce, and then sprinkle with cheese.
- Bake at 375 covered with foil for 30 minutes.
- Bake uncovered for 15 minutes.
- Serve with your favorite taco and enchiladas toppings.
