Gut-Healthy Homemade Marshmallows
The perfect pillowy marshmallows that will make you give up store-bought!
You will be obsessed with these marshmallows! Everyone that I have made these for agree that they are way better than store-bought, and of course they are so much better for you. This recipe does not require any baking, but need to set on the counter overnight. It is important to let them dry out for around 2 days if you want to roast them! If they are too “wet” they will not hold as well.Ingredients
- 1 cup1 cup1 cup Water, divided
- 0.25 cup0.25 cup0.25 cup Grass Fed Gelatin
- 0.666 cups0.666 cups0.666 cups Maple Syrup, Pure, I do 1/2 maple and half honey
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp Tapioca Starch, for sprinkling

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, add the gelatin and pour 1/2 cup water evenly over to bloom. Set aside.
- Over medium heat, add rest of water and honey to a medium pot and bring to a boil for 7-10 minutes. Stir frequently to avoid burning.
- While the sugar/water is boiling, prepare 8x8 pan by coating the bottom with tapioca starch.
- Set up electric hand beaters or stand mixer.
- Slowly pour the sugar/water mixture into large bowl with bloomed gelatin while the beaters are on low.
- Increase speed and add optional vanilla.
- Beat for 8 minutes, until white and fluffy.
- Quickly pour into prepared pan and coat top with more starch.
- Let set for at least 4 hours, preferably overnight.
Notes
If you want to roast these, let sit for 2 days and toss with tapioca in between days! The best thing to do is let them air out on the counter.
