Hazelnut Energy Cups
These hazelnut energy cups are the perfect afternoon treat. They are made with natural sugars and filled with protein which truly makes them a nutritious snack while tasting like dessert. They’re great for you or even the kids after school!
Ingredients
- 4 - 6 whole4 - 6 whole4 - 6 whole Medjool Dates
- 0.5 cup0.5 cup0.5 cup Almond Butter
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, Or 1 scoop
- 2 Tbsp2 Tbsp2 Tbsp Agave Nectar (Syrup)
- 0.25 cup0.25 cup0.25 cup Hazelnut, Chopped
- 0.5 cup0.5 cup0.5 cup Baking Chocolate Chips
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a mixing bowl, add your almond butter, protein powder, agave and and chopped hazelnuts. Mix together and set aside.
- In a cupcake pan with liners, flatten a date at the bottom of the cupcake liner. Spoon the almond butter mixture on top of the date.
- Melt chocolate and coconut oil together. Use that to top the protein mix. Sprinkle with sea salt (optional). Set in freezer for 5-10 minutes.
- Enjoy!
Notes
You can use almond butter, hazelnut butter or even an oat butter here.
