Healthy Carrot Banana Muffins
My baby recently turned one, and we are officially getting into a bit more of a picky stage (sigh). While he overall is an amazing eater, there are times when I'm needing to get a bit more creative in the kitchen and find new recipes to keep him excited. Thus, these Healthy Carrot Banana Muffins were born! I'm always looking for ways to sneak some veggies into his meal, and these have the added bonus of fiber, vitamins, minerals, and yumminess, of course. You can make these into regular or mini muffins as well! Excited for y'all to try 🙂
Ingredients
Dry Ingredients
- 1 cup1 cup1 cup Whole Wheat Flour
- 0.5 cup0.5 cup0.5 cup Sprouted Rolled Oats - One Degree Organic
- 0.5 tsp0.5 tsp0.5 tsp Cinnamon, Ground

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Baking Powder

Wet Ingredients
- 222 Ripe Banana, mashed; about 2 medium bananas
- 1 cup1 cup1 cup Grated Carrots, about 2 medium carrots
- 222 Eggs
- 0.333 cup0.333 cup0.333 cup Applesauce, Unsweetened
- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, or avocado/olive oil
- 2 Tbsp2 Tbsp2 Tbsp Honey, or maple syrup (more if you want a sweeter result)

- 1 tsp1 tsp1 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Grease or line a muffin tin (or use silicone).
- Add all of the dry ingredients to a large mixing bowl, and stir to combine.
- To a separate mixing bowl, add all of the wet ingredients. Whisk to combine completely.
- Pour the wet mixture in with the dry, and gently fold with a spatula to combine. Avoid over-mixing the batter for a fluffier result!
- Pour batter evenly into your muffin tin.
- Bake for 20-25 minutes for a 12-cup muffin tin or 10-15 for a 24-cup mini muffin tin. Test with a toothpick to determine doneness.
- Allow to cool for a few minutes before transferring to a cooling rack. Enjoy!
