Mediterranean Sheet Pan Shrimp & Veggies
Back again with another quick and easy sheet pan meal for y’all! This is one of my most frequent recipe requests, and I can understand why. Sheet pan meals are an absolute lifesaver for busy weeks and provide the best leftovers. For this recipe, I was inspired by some of my favorite fresh flavors that just never seem to fail. Ingredients
- 1.5 lb1.5 lb1.5 lb Shrimp, Raw, peeled and devained
- 111 Lemon, juiced
- 4 Tbsp4 Tbsp4 Tbsp Extra Virgin Olive Oil, divided
- 2 cloves2 cloves2 cloves Garlic, minced
- 2 tsp2 tsp2 tsp Smoked Paprika
- 2 tsp2 tsp2 tsp Oregano, Dried
- 1 tsp1 tsp1 tsp Red Pepper Flakes
- 1 pinch1 pinch1 pinch Salt and Pepper
- 1 bunch1 bunch1 bunch Asparagus, woody ends discarded
- 1 pint1 pint1 pint Tomato, Cherry
- 111 Red Onion, sliced
- 0.5 cup0.5 cup0.5 cup Kalamata Olives, pitted & roughly chopped
- 0.5 cup0.5 cup0.5 cup Feta Cheese, crumbled
- 0.333 cup0.333 cup0.333 cup Parsley, chopped
- 4 cups4 cups4 cups Basmati Rice, cooked, or quinoa, to serve

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees.
- To a large bowl, add shrimp, 2 tbsp of olive oil, lemon juice, garlic, paprika, oregano, and a generous pinch of salt and pepper. Toss to coat. Set aside.
- Add asparagus, tomatoes and red onion to a sheet pan. Drizzle with remaining 2 tbsp of olive oil and a generous pinch of salt and pepper. Toss to coat.
- Place veggies in the oven, and roast for 15 minutes.
- Remove tray from the oven, and add shrimp and olives.
- Roast for another 8-10 minutes (depending on the size of the shrimp), until shrimp are pink and slightly golden.
- Serve alongside rice or quinoa, and top with feta and parsley. Enjoy!
