lunchables were always a special occasion growing up — so bringing them back now feels extra nostalgic + putting my dietitian twist on it making them healthier & high-protein 🙌

each pizza lunchable starts with a GF mini simple mills crusts, then features a sauce, meats, & all the fun toppings. here are 3 delicious variations - pepperoni pizza, buffalo chicken, & taco pizza.

oh, and let’s be real… you can't have a lunchable without the sweet treat 😉

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

mini pizza crusts

  1. preheat oven to 375.
  2. in a large bowl, combine pizza crust mix & psyllium husk.
  3. in a separate bowl, whisk together greek yogurt, ACV, & water.
  4. add liquid ingredients to dry & create into a dough; add any additional water as needed.
  5. cut dough into ~20 pieces, then flatten out into round little discs.
  6. bake for 12-15 minutes (flipping at about 8-10 minutes) or until golden brown on top.

pepperoni pizza

  1. add all sauce ingredients to a food processor or use an immersion blender & blend.
  2. to build your pizza, layer sauce, pepperoni & meat sticks, cheese, & other toppings of choice onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.

buffalo chicken pizza

  1. add all sauce ingredients to a food processor or use an immersion blender & blend.
  2. to build your pizza, layer buffalo sauce, buffalo meat sticks, cheese, & other toppings of choice onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.

taco pizza

  1. in a bowl, mix together refried beans & salsa to make the sauce.
  2. to build your pizza, layer sauce, meat sticks, cheese, & other toppings of choice onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.
