healthy pizza lunchable
lunchables were always a special occasion growing up — so bringing them back now feels extra nostalgic + putting my dietitian twist on it making them healthier & high-protein 🙌
each pizza lunchable starts with a GF mini simple mills crusts, then features a sauce, meats, & all the fun toppings. here are 3 delicious variations - pepperoni pizza, buffalo chicken, & taco pizza.
oh, and let’s be real… you can't have a lunchable without the sweet treat 😉
Ingredients
mini pizza crust
- 9.8 oz9.8 oz9.8 oz Almond Flour Pizza Dough Baking Mix - Simple Mills, 1 box
- 1 Tbsp1 Tbsp1 Tbsp Psyllium Husk, Ground

- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 4 - 6 Tbsp4 - 6 Tbsp4 - 6 Tbsp Water
creamy pizza sauce
- 0.5 cup0.5 cup0.5 cup Tomato Sauce, for sauce
- 0.5 cup0.5 cup0.5 cup Cottage Cheese, for sauce
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto, for sauce

- 1 Tbsp1 Tbsp1 Tbsp Amore [Italian] Seasoning - Primal Palate, for sauce

- 1 Tbsp1 Tbsp1 Tbsp Nutritional Yeast, for sauce

- 0.25 cup0.25 cup0.25 cup Water, for sauce
- 111 Pepperoni, diced
- 111 Chicken Pizza Mini Meat Sticks - The New Primal, diced

- 111 Mozzarella, shredded, may sub cheese of choice
- 111 Peperoncini Peppers, + other toppings - olives, basil, red pepper flakes, etc.
buffalo chicken
- 1 cup1 cup1 cup Cottage Cheese, for sauce
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen, for sauce

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Dill Pickle Juice, for sauce

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Organic Garden Ranch Seasoning Mix - Primal Palate, for sauce

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto, for sauce

- 111111 Buffalo Style Chicken Meat Sticks - New Primal, diced

- 111 oven-baked bacon (click for recipe), diced
- 111 Dill Pickle Slices, diced

- 111 Mozzarella, shredded, may sub cheese of choice
taco pizza
- 1 cup1 cup1 cup Vegan Refried Black Beans - Siete Foods, or refried pinto benas

- 0.25 cup0.25 cup0.25 cup Salsa Verde, or salsa of choice

- 111 Grass-Fed Beef and Organ Meat Sticks - Lineage Provisions, diced

- 111 Pepper Jack Cheese, shredded, may sub cheese of choice
- 111 Lettuce, Romaine, + other toppings - tomatoes, black olives, etc.
- 111 Traditional Tortilla Chips - Masa

- 111 greek yogurt ranch dressing (click for recipe), I used the jalapeño flavor

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
mini pizza crusts
- preheat oven to 375.
- in a large bowl, combine pizza crust mix & psyllium husk.
- in a separate bowl, whisk together greek yogurt, ACV, & water.
- add liquid ingredients to dry & create into a dough; add any additional water as needed.
- cut dough into ~20 pieces, then flatten out into round little discs.
- bake for 12-15 minutes (flipping at about 8-10 minutes) or until golden brown on top.
pepperoni pizza
- add all sauce ingredients to a food processor or use an immersion blender & blend.
- to build your pizza, layer sauce, pepperoni & meat sticks, cheese, & other toppings of choice onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.
buffalo chicken pizza
- add all sauce ingredients to a food processor or use an immersion blender & blend.

taco pizza
- in a bowl, mix together refried beans & salsa to make the sauce.
