Healthy Vegan Shamrock Shake
This Healthy Shamrock Shake is a vegan spin on the classic, perfect for St. Patrick's Day. It's a creamy, minty treat that's so irresistible you'd never guess it's dairy-free, naturally colored and flavored, and made with wholesome ingredients!
Ingredients
- 1 cup1 cup1 cup Coconut Milk, full fat (canned), frozen in an ice cube tray (see notes)
- 1.5 cups1.5 cups1.5 cups Ice Cubes
- 1 cup1 cup1 cup Baby Spinach, or 8-10 drops natural green food coloring
- 0.50.50.5 Avocado, large, ripe
- 1 cup1 cup1 cup Almond Milk, or more coconut milk or any non-dairy milk
- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Agave Nectar Syrup, to taste
- 1.5 tsp1.5 tsp1.5 tsp Vanilla Bean Paste, or vanilla extract
- 0.5 tsp0.5 tsp0.5 tsp Peppermint Extract
- 1 pinch1 pinch1 pinch Salt
- 0.25 cup0.25 cup0.25 cup Coconut Whipped Topping
- 1 tsp1 tsp1 tsp Sprinkles
- Maraschino Cherries

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by making the frozen coconut milk cubes. Shake your can of coconut milk well, then open it and pour 1 cup coconut milk into an ice cube tray. Freeze until firm– 4-6 hours, or overnight.
- Once frozen, put the coconut milk cubes into a high-powered blender along with the ice cubes, spinach, avocado, almond milk, agave, vanilla bean paste, peppermint extract, and salt. Blend until smooth and creamy.
- If too thick, thin with a bit more almond milk. Taste and adjust flavor as needed, adding more peppermint extract for minty flavor or agave for sweetness.
- Pour into two glasses and top with coconut whipped cream, sprinkles, and a maraschino cherry, if desired. Enjoy!
Notes
Full fat canned coconut milk is best for a rich, creamy texture, but light canned coconut milk also works. *Prep time includes freezing coconut milk cubes.
