Strawberry Glaze Smoothie (Erewhon Copycat)
This Strawberry Glaze Smoothie is a homemade vegan version of the cult-favorite from Erewhon Market—made for a fraction of the price. It's thick, creamy, and packed with plant-based protein, complete with a swirl of rich coconut cream and sweet strawberry glaze. This dreamy smoothie is as nourishing as it is visually stunning.
Ingredients
Strawberry Glaze
- 1 cup1 cup1 cup Strawberries, (fresh or frozen), roughly chopped
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Lemon Juice
Smoothie
- 1 cup1 cup1 cup Frozen Strawberries
- 111 Banana, ripe, peeled, broken into chunks, and frozen
- 0.250.250.25 Avocado, large, ripe
- 111 Medjool Dates, pitted
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, or 1 serving (mine is 30g), will be 1-2 scoops depending on the brand, optional
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Pure Maple Syrup, optional for extra sweetness
- 0.125 tsp0.125 tsp0.125 tsp Vanilla Stevia Drops - SweetLeaf, optional for extra sweetness
- 0.75 cup0.75 cup0.75 cup Almond Milk
- 1 Tbsp1 Tbsp1 Tbsp Coconut Cream, for the glass
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by making the strawberry glaze. In a small saucepan over medium-high heat, add the strawberries, maple syrup, and lemon juice. Bring the mixture to a boil, then turn down to medium heat and let simmer for a few minutes, until the strawberries have softened. Mash strawberries with a potato masher or fork and simmer for another 8-10 minutes. Transfer to a bowl or heat-safe jar to cool.
- While the glaze is cooling, make the smoothie. Add all smoothie ingredients, except coconut cream, to a high-powered blender and blend until smooth. I recommend using a blender with a tamper to push the ingredients toward the blades while blending. Otherwise, stop to scrape down or stir the ingredients as needed. Add additional splashes of milk as needed to help blend. The consistency should be very thick and creamy.
- To assemble, smear coconut cream around the sides on the inside of your serving glass. Scoop some of the strawberry glaze into the bottom of the glass and smear more around the sides. You may have leftover strawberry glaze. Pour the smoothie in the glass and enjoy immediately.
