Herbed Chicken Salad
You will never be bored with all of my chicken salad recipes! This Herbalicious Chicken Salad makes my 12th recipe! This one is particularly great for when all those summer herbs are overflowing in your garden! The addition of fresh squeezed lemon juice along with the fresh herbs really screams summer!
Ingredients
- 2 lb2 lb2 lb Skinless Chicken Breast, roasted and diced
- 2 pieces2 pieces2 pieces Celery, diced
- 3 whole3 whole3 whole Green Onion (Scallion), sliced
- 1 Tbsp1 Tbsp1 Tbsp fresh Dill, chopped
- 1 Tbsp1 Tbsp1 Tbsp Flat Leaf Parsley, chopped
- 1 tsp1 tsp1 tsp fresh Thyme, chopped
- 0.5 whole0.5 whole0.5 whole Lemon, juiced
- 0.5 cup0.5 cup0.5 cup Mayonnaise
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Combine in a large bowl, mayonnaise, lemon juice, herbs, salt and pepper and mix well

I made this today and am enjoying some as I type this. Another winner from Penny’s beautiful collection of salads. Loaded with flavor in every bite, quick and easy. Versatile enough to use whatever herbs you have on hand. Enjoying this as a side with a grilled sausage, and it’s the perfect dinner. The flavors melded nicely after sitting in the fridge for a few hours. This will definitely be on regular rotation. I’ll try it in a wrap next.
