Hidden Veggie Mac and Cheese
This hidden veggie mac & cheese is the perfect way to sneak in vegetables for your kids. Stick with the orange colored vegetables so that the color of the macaroni and cheese does not change. I promise they will not know the difference and they will love it. Plus, there is nothing better than homemade batch of mac & cheese.
Ingredients
- 1 lb1 lb1 lb Macaroni Pasta

- 1 cup1 cup1 cup Carrots
- 1 cup1 cup1 cup Butternut Squash
- 1 cup1 cup1 cup Whole Milk
- 8 Tbsp8 Tbsp8 Tbsp Butter, Unsalted - Kerrygold
- 16 oz16 oz16 oz Cheddar Cheese

- 1 cup1 cup1 cup Cottage Cheese
- 1 tsp1 tsp1 tsp Sea Salt

- Bring a pot of water to boiling and add your pasta. Begin cooking.
- While the pasta is cooking, add your cooked butternut squash, carrots, and milk to a blender. Blend until it becomes creamy. Set aside.
- Once the pasta is done, drain it and set it aside. And the same pot add the blended vegetables, butter, cottage cheese, cheddar cheese, and sea salt. Stir over medium heat until everything is melted, and your sauce is created. Add the pasta.
- Makes it and pour into a bowl to serve. Enjoy!
