High Protein Lemon Pea And Shrimp Risotto
This dish is so easy, so tasty, and did I mention dairy and gluten free!!
Ingredients
- 1 lb1 lb1 lb Shrimp, Raw

- 0.50.50.5 Lemon

- 8 oz8 oz8 oz Chickpeas, Banza rice package
- 1 cup1 cup1 cup Alfredo Sauce, Dairy-Free - Primal Kitchen
- 1 cup1 cup1 cup Peas, Frozen
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1) Get some water boiling for the rice.
- 2) Heat 1 tbsp olive oil in a skillet
- 3) Pat the shrimp with a paper towel and add to the pot when the oil is hot, sprinkling salt and pepper on top
- 4) When the water is boiling add the rice.
- 5)The shrimp should be about done by now, add in the peas, cook for just a couple of minutes until warm
- 6) Then add in the Alfredo and the zest and juice from the lemon
- 7) The pasta should be done, put 1/2 cup of rice water into the shrimp mixture, drain the rest of the pasta, and add it to the shrimp mixture as well
- 8) Simmer and stir for a couple of minutes until nice and creamy
- 9) Sprinkle with more salt. Enjoy!!
