Homeade Sausage and Cheese Ravioli (Edit recipe)

One of my favourite cozy comfort foods is my Homemade Sourdough Ravioli! Packed with sausage, cheese, plenty of herbs and topped with a delicious brown butter sauce you are sure to make your tastebuds very happy with this dish!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Begin your ravioli noodle dough. I will leave my recipe in the notes section below. I use sourdough discard in mine so if you don't have sourdough discard on hand you may want to find another simple noodle recipe on line! Most only require flour and egg yolk!
  2. Once your dough is prepped, begin cooking your meat mixture. Combine Italian sausage, onion, garlic, herbs and seasonings in a pan and cook your meat mixture until there's no more pink. Set aside while you make your cheese mixture.
  3. Once your cheese mixture is prepped, add in your Italian sausage mixture and stir until it's all combined evenly.
  4. Then you will move back to your noodles and begin shaping and filling your ravioli squares!
  5. Place your filled noodles on a lightly floured baking sheet while you prep your butter sauce.
  6. Bring a pot of water and a few pinches of salt to a boil. Allow that water to heat up while you make your butter sauce.
  7. Heat a stainless steal pan over medium heat so that the surface is nice and hot. Add your butter and allow it to brown. 9Make sure to pay attention to it so it does not burn!)
  8. Then add in garlic, lemon juice(zest if adding), fresh herbs, and spices. It should be a slightly runny sauce. Then lower the heat, or turn off while you cook noodles.
  9. Cook ravioli noodles for about 3 minutes or until they are floating and very buoyant on the top surface of the boiling water.
  10. Then remove the ravioli from the boiling water and immediately place them in the sauce pan with the browned butter sauce.
  11. Toss to coat the noodles with the sauce and then serve warm with fresh parmesan cheese and fresh herbs like basil, parsley, and cilantro.

Notes

Sourdough Pasta Noodles: 200 grams organic all purpose flour, 140 grams sourdough discard, 5 egg yolks. You can place the flour on your counter and make a well in the middle for the eggs and discard. Slowly incorporate with a fork until its all mixed up enough to make a sticky dough for you to kneed. OR you can do what I do most days because im short on time, and throw it in the kitchen aid with the dough hook until it's all combined in a smooth yellow ball! Then you will take that ball and cover it with plastic wrap so no air is able to get to it. I ferment in the fridge for about 2 hours to overnight if needed, or you can ferment on the counter for up to an hour. Just take sure it is wrapped tightly! If it's refrigerated, remover form the fridge and place on the counter for about 20 minutes before you begin to prepare your noodles. Use plenty of flour on your surface when you roll them out or use a pasta machine for a more simple and timely approach!
