Homemade Ube Superfood Powder
I’ve seen a rush of Ube (aka purple sweet potato) drink mixes lately and while I love ube and its mild subtly sweet/nutty vanilla flavor, I wasn’t thrilled with the price tag associated with them. So I decided to make my own and I will say, it’s pretty tasty! Three simple ingredients, zero sugar and packed with benefits. I used Ube Superfood Powder by Suncore Foods mixed with my favorite Vanilla Collagen from Further Food. An added kiss of vanilla from Vanilla Salt and you’re set! I now have this in my “latte/drink mix” basket in my pantry, so I can stir up an ube infused beverage in no time!

- .25 cup.25 cup.25 cup Purple Sweet Potato Powder, I use Suncore Foods brand, see link above

- .25 cup.25 cup.25 cup Vanilla Collagen Peptides Powder - Further Food

- .25 tsp.25 tsp.25 tsp Vanilla Baking SALT - am.Niccoli

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients to a small bowl and whisk well to fully combine.
- Store in an airtight container, and use about 1-2 tsp powder for each serving. You can add more or less depending on how strong you’d like the ube flavor to come through.
- For a standard an Iced Ube Latte - mix 1-2 tsp ube powder with 2-3 tbsp water in a small bowl and whisk like you would a matcha powder til you have an “ube paste” - place in a cup, add ice and then top with your milk of choice as well as a frothy top if desired.
