Instant Pot Chocolate Stout Beef Stew
This easy & deliciously cozy instant pot beef stew is loaded with flavor from a rich, dark stout beer with notes of chocolate & coffee. A hearty, make-ahead dinner that can sit in the instant pot for hours using the “Keep Warm” setting so it’s ready when you need it to be - and also reheats well as leftovers. Dairy-free, egg-free, nut-free and gluten-free if you use gluten-free beer.
Ingredients
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 1 whole1 whole1 whole Yellow Onion, Chopped (1 cup chopped)
- 6 cloves6 cloves6 cloves Garlic, Roughly chopped
- 6 whole6 whole6 whole Carrots, Large carrots; sliced into 1/2-inch pieces
- 8 whole8 whole8 whole Celery, Sliced into 1/2-inch pieces
- 1.5 lb1.5 lb1.5 lb Baby Dutch Yellow Potatoes, Halved
- 8 oz8 oz8 oz Baby Bella Mushrooms, Halved (large mushrooms can be quartered)
- 2.5 lb2.5 lb2.5 lb Beef Cubed Steak, *Use beef stew meat*
- 2 tsp2 tsp2 tsp Salt
- 1.25 cups1.25 cups1.25 cups Stout Beer, Gluten-Free, Choose a stout beer with notes of chocolate & coffee
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add olive oil to instant pot. Set “Sauté” mode for 5 minutes.
- Add onions, garlic, carrots, celery & potatoes; stirring frequently for 3 minutes.
- Add mushrooms; stir 1 minute before adding beef stew meat & salt. Stir additional 1 minute.
- Pour in stout beer. Do not stir. Close & seal instant pot lid. Turn off “Sauté” mode. Select “Pressure Cook” mode then select “Stew” mode (which should be 25 minutes on high) or select “Custom” mode for 25 minutes on high. Make sure the “Keep Warm” mode is turned on. Makes 6-8 servings.
