Lemon Blueberry Granola Bites (GF)
These granola bites are packed with feel-good ingredients that keep you fueled and satisfied, especially for a long game night. The stars here are Lark Ellen Farm Lemon Blueberry Granola and CITREVE freeze-dried blueberries and freeze-dried lemons. I couldn’t stop eating them, so you might want to make a double or even triple batch. I love using my mini food processor for smaller recipes like this.
Ingredients
- 1 cup1 cup1 cup Lemon Blueberry Sprouted Granola (Grain-Free) - Lark Ellen Farm

- 1/4 cup1/4 cup1/4 cup Organic Sprouted Almonds - Lark Ellen Farm

- 2 Tbsp2 Tbsp2 Tbsp Freeze-Dried Wild Blueberries, tasting size - CITREVE

- 1/2 Tbsp1/2 Tbsp1/2 Tbsp Freeze-Dried Lemon Slices, tasting size - CITREVE, finely crushed

- 1/4 cup1/4 cup1/4 cup Almond Butter

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Pure Maple Syrup, can sub honey

- 1/4 tsp1/4 tsp1/4 tsp Vanilla Extract

- 1/8 tsp1/8 tsp1/8 tsp Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the granola, almonds, freeze-dried blueberries and freeze-dried lemons to a food processor. Pulse 8-12 times, just until the mixture is broken down into a fine, crumbly texture with some pieces still visible. You’re aiming for coarse and cohesive, not sandy. Scrape down the sides as needed.
- Add the almond butter, maple syrup, vanilla extract and salt to the food processor with the dry mixture. Pulse 4-6 more times until the mixture starts to come together. Avoid overprocessing. The mixture should remain crumbly but hold together easily when pressed.
- Using a scoop, press and roll the mixture into bites and place them on a parchment-lined baking sheet. Roll firmly, as tighter bites will hold together better once chilled. If the mixture isn’t holding together, add 1-2 more tablespoons of almond butter and pulse again. Sometimes a few extra pulses are all it needs to bind.
- Transfer the bites to the refrigerator and chill for 30 minutes to 1 hour, until set. Enjoy!
Notes
The ideal texture should feel slightly sticky before chilling, hold its shape when rolled, and not crack. Don’t hesitate to add a bit more nut butter, or even a small drizzle of maple syrup, to help everything bind together while processing. They're a little delicate and oh so delicious.
