These granola bites are packed with feel-good ingredients that keep you fueled and satisfied, especially for a long game night. The stars here are Lark Ellen Farm Lemon Blueberry Granola and CITREVE freeze-dried blueberries and freeze-dried lemons. I couldn’t stop eating them, so you might want to make a double or even triple batch. I love using my mini food processor for smaller recipes like this.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the granola, almonds, freeze-dried blueberries and freeze-dried lemons to a food processor. Pulse 8-12 times, just until the mixture is broken down into a fine, crumbly texture with some pieces still visible. You’re aiming for coarse and cohesive, not sandy. Scrape down the sides as needed.
  2. Add the almond butter, maple syrup, vanilla extract and salt to the food processor with the dry mixture. Pulse 4-6 more times until the mixture starts to come together. Avoid overprocessing. The mixture should remain crumbly but hold together easily when pressed.
  3. Using a scoop, press and roll the mixture into bites and place them on a parchment-lined baking sheet. Roll firmly, as tighter bites will hold together better once chilled. If the mixture isn’t holding together, add 1-2 more tablespoons of almond butter and pulse again. Sometimes a few extra pulses are all it needs to bind.
  4. Transfer the bites to the refrigerator and chill for 30 minutes to 1 hour, until set. Enjoy!

Notes

The ideal texture should feel slightly sticky before chilling, hold its shape when rolled, and not crack. Don’t hesitate to add a bit more nut butter, or even a small drizzle of maple syrup, to help everything bind together while processing. They're a little delicate and oh so delicious.
