Lemon Blueberry Overnight Oats
These Lemon Blueberry Overnight Oats are creamy, refreshing, and packed with about 15 grams of plant-based protein for a satisfying make-ahead breakfast. Simple enough for everyday, but when layered with blueberry compote and granola, they’re elevated enough to feel special.
Made with Maizly Original Corn Milk, these overnight oats are ultra-creamy and provide added fiber to help support gut health.
Ingredients
- 0.5 cup0.5 cup0.5 cup Oats, Rolled
- 0.5 cup0.5 cup0.5 cup Cornmilk - Maizly

- 0.25 cup0.25 cup0.25 cup Almond Milk Yogurt, or other dairy-free yogurt
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Protein Powder, Plant Based, about 15g (optional)

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Chia Seeds
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Pure Maple Syrup, or to taste

- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract, (optional)

- 1 tsp1 tsp1 tsp Lemon Zest
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice, from 1/2 a lemon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a container or mason jar, add oats, soy milk, dairy-free yogurt, protein powder, chia seeds, maple syrup, vanilla extract, lemon zest, and lemon juice. Stir until well combined.
- Add the blueberries and fold in until evenly distributed.
- Cover and refrigerate overnight or at least 4 hours.
- The next morning (or when ready to eat), give the oats a stir. If the mixture is too thick, add a splash of soy milk and stir again. Add your favorite toppings if desired, like blueberry compote (see notes), granola, fresh blueberries, and lemon zest. You can also alternate the oats with toppings in a jar or glass for a pretty, parfait-style effect. Serve and enjoy!
Notes
- Blueberry compote: I made a quick blueberry compote by simmering 1½ cups blueberries (fresh or frozen) in a saucepan over medium heat for about 15 minutes, stirring occasionally. It will thicken as it cools. You can also use blueberry jam.
- Storage: Store overnight oats in an airtight container or mason jar in the fridge for up to 5 days. Add toppings when ready to serve.
