Cookie Dough Bars (Healthy, No-Bake)
These Cookie Dough Bars are delicious bars of chewy no-bake cookie dough, stuffed full of chocolate chips, and topped with an indulgent chocolate ganache. They’re made with healthier ingredients and are sure to become your new favorite treat!

Cookie Dough Layer
- 1 cup1 cup1 cup Cashew Butter
- 0.5 cup0.5 cup0.5 cup Almond Flour
- 0.5 cup0.5 cup0.5 cup Oat Flour, or more almond flour
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 2 tsp2 tsp2 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips
Chocolate Ganache
- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips
- 0.5 cup0.5 cup0.5 cup Coconut Cream, see notes
- 1 pinch1 pinch1 pinch Sea Salt, for topping, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large mixing bowl, combine cashew butter, almond flour, oat flour, maple syrup, vanilla, and salt. Stir until a thick dough forms. Fold in chocolate chips.
- Press dough into a parchment-lined 8x8 pan or loaf pan. Set aside.
- Add chocolate chips to a small bowl. Microwave in 30 second intervals, stirring in between, until fully melted. Stir in coconut cream until smooth.
- Spread the ganache over the cookie dough layer.
- Place in the fridge to set for one hour. Remove from dish, sprinkle with flaky sea salt, and slice into squares. Enjoy!
Notes
For the coconut cream, you can use canned coconut cream or canned full fat coconut milk. If using coconut milk, chill the can in the fridge at least overnight, but ideally 24 hours. This allows the thick cream to separate from the liquid. Do not shake the can. Scoop the cream off the top. Storage: Store bars in an airtight container in the fridge for up to 10 days.
