Lingonberry Waffles
I’m a sucker for waffles and these did not disappoint. If you can’t find Lingonberry Jam, you can use any jam you’d like. The taste is similar to cranberries but are not quite as tart.
Ingredients
- 2.25 cups2.25 cups2.25 cups All Purpose Flour
- 2 cups2 cups2 cups Almond Milk
- 1/4 cup1/4 cup1/4 cup Mascarpone Cheese
- 1/3 cup1/3 cup1/3 cup Lingonberry Jam
- 1 Tbsp1 Tbsp1 Tbsp Baking Powder
- 3 Tbsp3 Tbsp3 Tbsp Granulated White Sugar
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 222 Eggs, room temperature, separated
- 1/2 cup1/2 cup1/2 cup Coconut Oil
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Creme fraiche, for serving
- 1/4 cup1/4 cup1/4 cup Honey, for serving
- 1/4 cup1/4 cup1/4 cup Lingonberry Jam, for serving
- 1 cup1 cup1 cup Strawberries, Mixed berries for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your waffle iron, spray with non stick cooking spray ( I use Coconut) and set aside.
- In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
- In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
- In a separate bowl mix together the egg yolks, oil, mascarpone, milk and vanilla extract.
- Add the egg yolk mixture to the dry ingredients and mix well.
- Fold in the Lingonberry Jam then fold in the egg whites.
- Pour the batter onto your hot waffle iron and cook according to manufacturer's directions.
- Serve immediately with Creme Fraiche, Lingonberry Jam, Fresh berries and honey.
- Enjoy!
