Loaded Baked Potato Rounds (Gluten Free)
Loaded potato rounds are a cozy game day classic, and this is my favorite way to make them. Turning them into bite-sized rounds keeps them easy to eat, easy to share, and naturally gluten free. These are made with DIY bacon from US Wellness Meats (the best of the best when it comes to quality meats that ship right to your door) and one of our go-to seasonings, Meat & Potatoes from Primal Palate. They’re simple, customizable, and perfect for feeding a crowd. I bake them on my favorite nontoxic baking sheets, which are the only ones we use at home and truly never let me down. And if you prefer to grate your own cheese at home, this is the rotary grater we use regularly.
Ingredients
For the Potatoes
- 3 whole3 whole3 whole Potatoes, Russet, washed and dried
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Olive Oil

- 3/4 tsp3/4 tsp3/4 tsp Salt, adjust to taste

- 1.5 tsp1.5 tsp1.5 tsp Meat & Potatoes Seasoning - Primal Palate

- 8 oz8 oz8 oz Cheddar Cheese, shredded; can mix colby jack & cheddar too

For the Bacon
- 1 lb1 lb1 lb Sliced Fresh Side Pork Bacon (DIY Bacon) - US Wellness Meats

- 1 tsp1 tsp1 tsp Salt, *if using salted bacon already, skip added salt here

- 1 tsp1 tsp1 tsp Meat & Potatoes Seasoning - Primal Palate

Extra Garnishes
- Sour Cream
- Green Onion (Scallion), chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the bacon by laying it in a single layer on a lined baking sheet. Place the pan in a cold oven, then heat to 375°F and cook until crisp to your liking, watching closely once fragrant. Transfer to a paper towel lined plate to absorb excess fat, season with salt and Meat & Potatoes seasoning, then let cool and chop into small pieces. *If you are using bacon that is already salted, skip the extra salt and season only with the meat & potatoes blend.
- Increase the oven temperature to 400°F.
- Slice the potatoes into ½ inch rounds.
- Toss the potato rounds in a large bowl with olive oil, salt, pepper, and meat & potatoes seasoning until evenly coated. Arrange in a single layer on a baking sheet and bake for 35 to 40 minutes, flipping halfway through, until tender and lightly golden.
- Top each potato round with cheese and return to the oven for a few minutes, just until the cheese is melted.
- Remove from the oven and finish with a dollop of sour cream, scallions, and the chopped bacon. Serve warm and enjoy.
