Macro-Friendly Chili Chicken Bowls
A cozy yet macro-friendly dinner bowl made with ground chicken seasoned in Kinder chili spice, creamy mashed potatoes, and crispy air-fried carrots—all finished with a drizzle of melty cheese. For a twist, we swapped in baked sweet potatoes for an extra boost of flavor and nutrients.

Ingredients

- 1.5 lb1.5 lb1.5 lb Ground Chicken

- 0.25 cup0.25 cup0.25 cup Onion, chopped
- .25 cup.25 cup.25 cup Bell Pepper, mixed colors, chopped
- 1 pieces1 pieces1 pieces Woodfired Chili Seasoning - Kinder's
- 2 - 3 pieces2 - 3 pieces2 - 3 pieces Garlic, crushed

- 3 Tbsp3 Tbsp3 Tbsp Tomato Paste

- 2 Tbsp2 Tbsp2 Tbsp Cumin, Ground

- 2 Tbsp2 Tbsp2 Tbsp Coriander, Ground
- 2 Tbsp2 Tbsp2 Tbsp Chili Flakes

- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 5 Tbsp5 Tbsp5 Tbsp Cilantro, chopped
- 5 Tbsp5 Tbsp5 Tbsp Green Onion (Scallion), sliced

- 1 cup1 cup1 cup Cheddar Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If swapping mashed potatoes for sweet potatoes, wrap 1 sweet potato in foil and place in oven at 350 degrees for 45-60 minutes.
- In a wide frying pan and at medium heat, add 1 tbsp oil, onions & peppers. Sautee for a few minutes until the onions become translucent. Add garlic, cook for 30 seconds.
- Add ground chicken, 1 packet of the chili seasoning, fill up the 1 packet of chili seasoning with water and add to pot.
- Start to break up meat using a meat chopper.
- Add cumin, coriander, salt, pepper, and chili flakes.
- Let it simmer for 10-15 minutes
- When almost done, add tomato paste and stir.
- Top with garnish if you like, fresh cilantro and green onions.
- For the mashed potatoes, I recommend buying ready-made from Target or Costco. Heat to the package directions. If you prefer fresh, follow steps above for sweet potato for 2 russett potatoes.
- To Plate:
- Start with mashed potatoes
- Top with Chicken and shredded cheese
- Eat with side of air fried carrots/vegetables
- Enjoy!
Notes
Mashed Potatoes: to save me some time, I buy the Target Good & Gather Mashed Potatoes and warm based on package directions.
