Marinated cherry tomato & basil linguine (Edit recipe)

This marinated cherry tomato & basil is everything we love about summer food. The ingredients are light, fresh & vibrant. The sauce is made by marinating cherry tomatoes in lashings of olive oil, lemon juice, zest, minced garlic, finely sliced red onion, oregano & a big bunch of fresh basil. Marinating requires little to no time in the kitchen, allowing you to spend more time outside this summer. I like to. marinade my tomatoes at room temp for 4 hours for optimal flavour. The flavours in this dish are truly beautiful, I hope you enjoy as much as I did.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Place the cherry tomatoes in a large bowl, pour over the olive oil. Grate in the lemon zest and squeeze in its juice. Sprinkle in the finely diced red onion, oregano and minced garlic. Season well with rock salt and cracked black pepper.
  2. 2. Mix together then cover. Set aside for 4 hours at room temperature to allow the flavours to fuze together. (2-3 if you’re pushed for time)
  3. 3. Cook pasta according to package instructions, and place in a serving dish. Pour over the tomato marinade and sprinkle in the majority of the Parmesan and fresh basil. Toss together and taste. Adjust seasoning if needed
  4. 4. Serve with a sprinkle more Parmesan and a few sprigs of basil. Enjoy

Notes

I marinaded my tomatoes for 4 hours at room temp for optimal flavour, however 2-3 hours is also ample.
