Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat your oven to 375 F.
- Blend the cottage cheese until completely smooth.
- Add the heavy cream, chicken broth, garlic powder, Italian seasoning, 4 tablespoons Parmesan cheese, paprika, salt, and black pepper. Blend again until the sauce looks silky and uniform.
- Add the raw chicken pieces, sun-dried tomatoes, green onions (optional), and sliced cabbage to an 8 x 8-inch baking dish. Toss gently to distribute evenly.
- Pour the cottage cheese sauce over the chicken and cabbage. Stir lightly so everything is coated and the chicken is nestled into the mixture.
- Sprinkle the remaining 2 tablespoons Parmesan cheese evenly over the top.
- Cover tightly with foil and bake for 20 minutes.
- Remove foil and return to the oven uncovered for 10 minutes.
- Rest 5 minutes before serving. Finish with fresh herbs if you are using them.
Notes
Blend the cottage cheese until completely smooth so the sauce bakes up creamy, not curdy. Green onions are optional because they add carbs. If you want fewer net carbs, use less cabbage and skip the green onions. For a richer, creamier sauce, keep the heavy cream (my choice). For a lighter, higher-protein sauce, swap the heavy cream for more cottage cheese. For a firmer, more sliceable casserole with less sauce, replace the heavy cream with 1 egg.
