Mediterranean Tofu Scramble
This Mediterranean tofu scramble is a quick, high-protein, plant-based breakfast packed with fiber, antioxidants, and heart-healthy fats from spinach, cherry tomatoes, and kalamata olives. And if you're not an olive lover leave those out and add what every veggies you love most π

- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Parsley, Dried

- 1 whole1 whole1 whole Lemon, juiced

- 1 pinch1 pinch1 pinch Salt and Pepper

- Heat olive oil in a pan over medium heat
