so let’s spice it up with this sweet & spicy, mexican-inspired salmon salad 🌶️🥭🐟
loaded with caramelized mango, avocado, cotija, jalapeño greek yogurt ranch, & a simple can of salmon (hello omega-3s 💪) — this one’s bursting with flavor and function.

Ingredients
- 2 cups2 cups2 cups sautéed frozen vegetables (click for recipe), I used frozen peppers & onions
- 1 lb1 lb1 lb Salmon, Canned, drained

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Taco Seasoning - Primal Palate

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 0.25 cup0.25 cup0.25 cup Cilantro, finely chopped
- 1 cup1 cup1 cup Mango, diced
- 111 Avocado, finely chopped
- 1/4 cup1/4 cup1/4 cup Jalapeño Pepper, finely chopped
- 0.5 cup0.5 cup0.5 cup Tomato, Cherry, diced

- 0.5 cup0.5 cup0.5 cup English Cucumber, diced
- 0.5 cup0.5 cup0.5 cup Cotija Cheese, or queso fresco
- greek yogurt ranch dressing (click for recipe), I used the jalapeño variation
- Traditional Tortilla Chips - Masa, or any chips for dipping

- Radish, or any veggies for dipping

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my sauteed frozen veggie hack by adding frozen peppers & onions to a skillet; saute until caramelized - allow to cool before adding to remaining salad.
- mix canned salmon with taco seasoning & cilantro.
- add all ingredients to a bowl, except dressing.
- in a separate bowl, make a jalapeño version of my greek yogurt ranch dressing, then mix into salad mixture.
- serve salad with your favorite tortilla chips + veggies & enjoy!
