Mini Meatloaf
These healthy mini meatloaves feature lean ground elk for a nutrient-dense, flavorful upgrade. Brushed with a quick homemade glaze, they’re juicy, satisfying, and perfectly portioned for an easy family dinner.
Ingredients
- 1 lb1 lb1 lb Elk, Ground, *can sub any lean ground meat

- 0.5 cup0.5 cup0.5 cup Onion, diced
- 0.333 cup0.333 cup0.333 cup Milk, *can sub dairy-free

- 0.25 cup0.25 cup0.25 cup Oat Flour, *can sub almond flour

- 1 whole1 whole1 whole Egg
- 2 Tbsp2 Tbsp2 Tbsp Ketchup
- 1 Tbsp1 Tbsp1 Tbsp Soy Sauce, *can sub tamari or coconut aminos

- 0.5 tsp0.5 tsp0.5 tsp Salt, 1/2-1 tsp to taste

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 0.25 cup0.25 cup0.25 cup Ketchup
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, *can sub sweetener of choice

- 1 Tbsp1 Tbsp1 Tbsp Yellow Mustard

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 375ºF and prepare a baking sheet with parchment paper. Set aside.
- In a large mixing bowl, combine the ground meat, diced onion, milk, oat flour, egg, ketchup, soy sauce, salt, and pepper, and mix until fully combined.
- Shape into 6 mini loaves and place on the prepared baking sheet.
- In a small mixing bowl, combine the ketchup, maple syrup, and mustard and whisk together until fully combined and smooth.
- Top each mini meatloaf with glaze and spread evenly.
- Bake for approximately 25-30 minutes or until the glaze is starting to carmelize slightly and the internal temperature reaches 160ºF.
- Remove from the oven and top with a sprinkle of fresh parsley, salt, and pepper. Enjoy!
- Store leftover meatloaves in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
Notes
Any type of lean ground meat will work. I personally love ground elk and turkey.
