mini taco bites
bite-sized tacos are the way to go 🌮✨ these remind me of those little freezer taco bites I used to devour as a kid — but made with better-for-you ingredients.
corn tortilla rounds layered with creamy refried beans, a homemade “chorizo” meat (because it's superior to taco meat), cheese, & a side of cool greek yogurt jalapeño ranch for dipping.
gluten-free. high-protein. perfect for a tailgate, cookout, or your dinner table.
Ingredients
"chorizo" meat
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 1.5 - 2 lb1.5 - 2 lb1.5 - 2 lb Ground Beef, or ground meat of choice

- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Chorizo Seasoning - Siete Foods, see notes for my homemade version
for building mini tacos
- Vegan Refried Black Beans - Siete Foods, + water to thin

- Corn Tortilla

- Pepper Jack Cheese, cheddar, queso fresco, or cotija
- greek yogurt ranch dressing (click for recipe), I made the jalapeño version

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
"chorizo" meat
- in a large skillet, saute peppers & onions for 6-8 minutes.
- add ground meat to the skillet & brown.
- once meat is cooked, add diced tomatoes/green chiles, vinegar & seasonings to make “chorizo” meat; simmer for 10-15 minutes.
building mini tacos
- preheat oven to 400.
- add tortillas to a plate & place a damp paper towel over top; microwave for 15-20 seconds.
- heat refried beans in a skillet, adding water until its more spreadable.
- add corn tortillas to a sheet pan, then spread on refried beans, add a scoop of “chorizo” meat, & top with cheese of choice.
- bake for 8-10 minutes, with option to broil for last 1-2 minutes.
- serve with a side of greek yogurt jalapeño ranch, salsa, or whatever mexican toppings you like!
Notes
homemade chorizo seasoning: 2 t smoked paprika, 2 t chili powder, 1 t cumin, 1 t oregano, 1 t coriander, ½ t garlic powder, ½ t onion powder, ¼ t cinnamon, salt & pepper to taste
