bite-sized tacos are the way to go 🌮✨ these remind me of those little freezer taco bites I used to devour as a kid — but made with better-for-you ingredients.
corn tortilla rounds layered with creamy refried beans, a homemade “chorizo” meat (because it's superior to taco meat), cheese, & a side of cool greek yogurt jalapeño ranch for dipping.
gluten-free. high-protein. perfect for a tailgate, cookout, or your dinner table.
Ingredients
- homemade "chorizo" meat (click for recipe)
- Vegan Refried Black Beans - Siete Foods, + water to thin

- Corn Tortilla

- Pepper Jack Cheese, cheddar, queso fresco, or cotija
- greek yogurt ranch dressing (click for recipe), I made the jalapeño version

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my instructions for making homemade "chorizo" meat.
- preheat oven to 400.
- add tortillas to a plate & place a damp paper towel over top; microwave for 15-20 seconds.
- heat refried beans in a skillet, adding water until its more spreadable.
- add corn tortillas to a sheet pan, then spread on refried beans, add a scoop of “chorizo” meat, & top with cheese of choice.
- bake for 8-10 minutes, with option to broil for last 1-2 minutes.
- serve with a side of greek yogurt jalapeño ranch, salsa, or whatever mexican toppings you like!
