These mint coconut truffles are a no-bake, gluten-free, dairy-free treat made with coconut yogurt, protein powder, and coconut flour. Creamy, refreshing, and naturally sweetened, they’re an easy make-ahead snack or better-for-you dessert.

  5. Place on a parchment-lined plate and refrigerate for at least 30 minutes to firm up.
