These mint coconut truffles are a no-bake, gluten-free, dairy-free treat made with coconut yogurt, protein powder, and coconut flour. Creamy, refreshing, and naturally sweetened, they’re an easy make-ahead snack or better-for-you dessert.

- In a bowl, stir together coconut yogurt, coconut, protein powder, stevia, peppermint extract, vanilla extract, and salt until smooth.
- Add coconut flour and mix until a soft, rollable dough forms.
- Let sit 2–3 minutes to thicken.
- Scoop and roll into small truffles.
- Place on a parchment-lined plate and refrigerate for at least 30 minutes to firm up.
- Dip chilled truffles in melted dark chocolate and return to the fridge to set.
