these miso brown butter protein blondies – birthday cake edition are rich, buttery, & sprinkle-filled — but are grain-free, sugar-free, & of course, loaded with protein (we don't want a birthday crash). 🤍🍰

sweet, salty, cozy, & celebratory… because honestly, who says birthday cake needs a calendar invite?

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. to a saucepan, add butter & melt over medium heat.
  3. once starts to melt, lower temperature & cook for an additional 8-10 minutes to brown.
  4. transfer fat to a bowl; allow to cool.
  5. add nut butter, both types of monk fruit, egg, extracts, & blended cottage cheese to cooled melted butter; mix together using a hand mixer.
  6. in a separate bowl, mix together almond flour, coconut flour, protein powder, baking powder, & salt, then mix into wet ingredients.
  7. fold in add-ins.
  8. line a square baking dish with parchment paper, then pour in blondie batter.
  9. bake blondies for ~25-30 minutes or until a toothpick comes out clean.
  10. to make pink protein "buttercream", to a food processor, add cottage cheese & vanilla extract.
  11. once pureed, add remaining ingredients & blend until fluffy.
  12. refrigerate until bars are completely cooled.
  13. add “buttercream” protein frosting to bars, then sprinkle on rainbow sprinkles.
  14. cut into bars & enjoy!
