Mushroom shawarma & sumac slaw flatbreads (Edit recipe)

Crispy mushroom shawarma, creamy tzatziki & fragrant sumac slaw. These might be messy but they are SO worth it!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1)Roughly chop the mushrooms ( you want them to still be biggish pieces because they will reduce in size) & place in a large bowl with the onion slices.
  2. 2) place the rest of the ingredients for the mushroom shawarmas in a small bowl & mix together well. Pour over the mushroom & onion mix & toss together well. Marinade for 2 hours.
  3. 3)prepare the slaw, by placing the grated carrot, shredded cabbage & chopped parsley in a bowl. Sprinkle over the sumac & squeeze in the lemon juice. Season with salt & mix together well, then set aside.
  4. 4) prepare the tzatziki by adding all the ingredients in a bowl & seasoning with salt. Mix together well.
  5. 5)preheat oven to 220c fan assisted & prepare a baking tray with parchment paper. Randomly thread the mushrooms & onions across 4 skewers, then place on the baking tray and roast for 15 minutes, turning occasionally.
  6. 6)if the veg has separated, push together, baste in any juices from the tray and roast for a further 12-15 minutes until crisp and golden brown.
  7. 7)warm the flatbreads, spread with tzatziki, a large helping of sumac slaw & some mushrooms & onion. Then sprinkle over pomegranate & some fresh herbs.
  8. 8)enjoy

Notes

I highly recommend using a mixture of mushrooms, for this recipe but don't worry if you can only get your hands on one type, it will still be just as good! Don't have flatbreads? you could try using pitta breads or wraps.
