No Flour Sweet Cottage Cheese Bread – High Protein, Low Carb
This no flour sweet cottage cheese bread is a soft, airy baked cottage cheese and egg bread made with no flour, no almond flour, no protein powder. It is a good fit when you want a high protein sweet bread with a cloud bread texture for breakfast, snacking, or something light with coffee. It is high-protein, low-carb, gluten-free, bood sugar friendly and diabetic-friendly. This is the version I make when I want my viral 2-ingredient cottage cheese bread idea, but actually want it sweet.

- 3 Tbsp3 Tbsp3 Tbsp Cottage Cheese
- 333 Eggs
- 2 Tbsp2 Tbsp2 Tbsp Confectioners Sugar, Powdered - Swerve

- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

- .5 tsp.5 tsp.5 tsp Lemon Zest
- 0.125 tsp0.125 tsp0.125 tsp Cream of Tartar

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F (175C). Line a loaf pan with greaseproof parchment paper or spray with oil.
- Separate the eggs carefully - egg whites in one clean, dry bowl, yolks straight into the blender.
- Add the cottage cheese, Swerve, vanilla extract, and lemon zest to the blender with the yolks. Blend until smooth and creamy.
- Add the egg whites and cream of tartar if using to the bowl. Whip until stiff peaks form. Lift the beaters - the peaks should stand up without falling back. If they wobble, keep going.
- Add the cottage cheese and yolk mixture to the egg whites in thirds, folding gently after each addition. Scrape under and over with a wide spatula, do not stir.
- Pour into the lined pan and smooth the top lightly. Do not tap the pan.
- Bake for about 20 minutes. Start checking at 15 minutes - if the top is already golden and set, turn the oven off then.
- Turn the oven off and prop the door open a few inches with a wooden spoon. Leave the loaf inside for at least 15 minutes. Do not skip this - it is what stops it deflating.
- Remove and cool in the pan for another 10 minutes before slicing.
