Whipped feta cottage cheese dressing with walnuts is a thick, creamy blended dressing made with full-fat cottage cheese, feta cheese, walnuts, and apple cider vinegar. If you have feta cheese and cottage cheese in the fridge, a bowl of chopped vegetables, and no interest in another bottle of ranch dressing, this is what I would make instead. It takes 5 minutes in a blender and makes about 2/3 cup, enough for 2 salads.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Crumble the feta cheese into a blender. Add the cottage cheese, apple cider vinegar, walnuts, oregano, garlic powder, and black pepper. Do not add salt. Feta cheese seasons the whole batch on its own, and brands vary enough that salting before you taste is how a good bowl goes wrong.
  2. Blend until smooth and creamy. It will look nearly there long before it is, so keep going until the walnut flecks have disappeared and the dressing is thick and glossy instead of speckled. If it still feels grainy on a spoon, the walnuts have not broken down. Blend again.
  3. Spoon it over whatever you are serving, or put the bowl on the table and let everyone help themselves. For a looser dressing, add water a teaspoon at a time and blend again until it slides off the spoon.

Notes

  • This recipe makes about 10 tablespoons, roughly 2/3 cup. A serving is 5 tablespoons.
  • Store in an airtight container in the fridge for up to 3 days. It is better on day 2, once the garlic and oregano have settled into the cottage cheese.
  • It thickens as it sits. Stir it, or give it a quick blast in the blender if it has gone stiff.
  • Serve with: Mediterranean SaladChicken Gyros, or Mediterranean Burgers.
