No Sugar Pumpkin Bread (Paleo)
This pumpkin bread is unsweetened, flourless and requires only 5 ingredients. It has a light and airy texture, but is moist and holds up well in the fridge.
Ingredients
- 0.5 cup0.5 cup0.5 cup Almond Butter
- 3 whole3 whole3 whole Eggs
- 0.5 cup0.5 cup0.5 cup Pumpkin Purée
- 1 tsp1 tsp1 tsp Pure Vanilla Extract, (optional)
- 0.333 cup0.333 cup0.333 cup Collagen, (35g)
- 1 tsp1 tsp1 tsp Baking Soda
- 1 tsp1 tsp1 tsp Ground Cinnamon, (optional)
- 0.5 tsp0.5 tsp0.5 tsp Pumpkin Pie Spice, (optional)
- 0.25 tsp0.25 tsp0.25 tsp Salt, (optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees F. Line an 8" x 4" baking pan with parchment paper and set aside.
- In a medium-sized mixing bowl, whisk together almond butter, eggs, pumpkin and vanilla.
- Add in collagen, baking soda, cinnamon, pumpkin spice and salt. Whisk until batter is well combined.
- Pour batter into lined baking pan and bake in preheated oven for 35 minutes.
- Cool for a few minutes in pan, then transfer to wire cooling rack and cool to room temperature.
- Store in fridge up to one week.
