Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. On medium-high heat, add 1 tbsp of oil to a braising pan OR dutch oven pot.
  2. 2. In a small mixing bowl, add chicken thighs and oil and season with paprika, onion/garlic powder, and Herbs de Provence. Mix until chicken is well coated.
  3. 3. Carefully add chicken, skin-side down first, to hot pan and sear for about 2-3 minutes on each side until golden brown.
  4. 4. Once golden, remove chicken and place on a plate and set aside. In the same pan, add thinly-sliced onions.
  5. 5. Sauté onions for 10 minutes until golden and translucent, then add a pinch of salt and 2 knobs of butter. Continue cooking until onions are carmelized.
  6. 6. Stir in rice and pour bone broth over. Deglaze the bottom of the pan by scraping any bits. Add remaining knobs of butter and carefully place the chicken back into the pan. Add salt and pepper to taste.
  7. 7. Cook rice and chicken for about 20-minutes, or until rice is tender and fluffy. Add cilantro as a garnish and serve!
