One Pot Vegetable Quinoa Pulao
This vegetarian one pot meal is a pick me up or for days when I am in a time crunch. It’s super easy and quick to make. A warm, wholesome Pulao made with fluffy quinoa, colorful vegetables, and gentle spices, this dish is rich in plant-based protein, fiber, and essential nutrients It’s naturally gluten-free, light yet satisfying, and perfect for a nourishing everyday meal. Ingredients
- 2 cups2 cups2 cups Quinoa
- 1 whole1 whole1 whole Red Onion, chopped
- 2 whole2 whole2 whole Tomato, chopped
- 1 cup1 cup1 cup Potatoes, Russet, diced
- 1 cup1 cup1 cup Frozen Vegetables, Can use a mix of beans/peas/carrots
- 1 tsp1 tsp1 tsp Garlic, minced, can sub with garlic powder

- 1 tsp1 tsp1 tsp Ginger Root, grated or chopped, can sub with ginger powder

- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil
- 1 Tbsp1 Tbsp1 Tbsp Ghee

- 2 whole2 whole2 whole Jalapeño Pepper, chopped, optional for heat
- 0.5 cup0.5 cup0.5 cup Cilantro, chopped, skip if you dont like cilantro
- 1.5 tsp1.5 tsp1.5 tsp Salt

- 2 sprigs2 sprigs2 sprigs Green Onion (Scallion), chopped

- 0.5 tsp0.5 tsp0.5 tsp Turmeric Powder

- 1 tsp1 tsp1 tsp Chili Powder, can sub with cayenne powder
- 0.5 tsp0.5 tsp0.5 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Garam Masala

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash the quinoa and soak it in water 15 minutes while you prep rest of the ingredients
- Heat the oil in a pan and add the onion
- Sauté till the onions get translucent
- Add the chopped ginger and garlic and sauté for a minute till they become fragrant
- Add the tomatoes and sauté till they turn soft
- Add the spices - turmeric, chili powder, cumin powder and garam masala and salt and sauté for a minute
- Toss in the quinoa in the pan and add 3 cups of water
- Cook covered for 10 to 15 minutes till all the water gets absorbed and the quinoa is fluffy.
- Add the ghee and herbs like cilantro and green onion and give it all a good mix.
- Serve hot with with a side of yoghurt or a chutney of choice
