Paleo Chocolate Caramel Cookie Bars
Gluten-free, dairy-free, egg-free, vegan, with nut-free option. With cookie, caramel, and chocolate layers, this one hits the spot and quickly has become a favorite! Like a Paleo Twix bar, but in a crumble bar format.
Ingredients
- 2 cups2 cups2 cups Almond Flour, (see notes)
- 1 cup1 cup1 cup Tapioca Starch
- .75 cup.75 cup.75 cup Coconut Sugar
- 1 tsp1 tsp1 tsp Baking Powder
- .25 tsp.25 tsp.25 tsp Salt
- 1 cup1 cup1 cup Coconut Oil, or ghee, melted
- 1 tsp1 tsp1 tsp Vanilla Extract
- .75 cup.75 cup.75 cup Caramel Sauce, paleo (see notes)
- .75 cup.75 cup.75 cup Semi-Sweet Mini Chocolate Chips, dairy-free

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper.
- In a medium mixing bowl, combine dry ingredients (almond flour through salt). Then add vanilla and coconut oil and stir still combined.
- Press half of cookie dough into the bottom of the prepared pan and cook for 5 minutes.
- Remove from oven and drizzle with caramel and then sprinkle with chocolate chips. Finally, crumble the remaining half of the dough over the chocolate chips and caramel. Bake again for 10 minutes.
- Remove from oven and chill in freezer for 1 hour until solid. Store in the fridge or freezer.

SUBSTITUTIONS:Need a nut-free option? We also enjoyed this with 1 cup cassava flour + 1 1/2 cup oats instead of the almond + tapioca flour.
