Paleo Fideo
Fideo, which technically means “noodle” and a staple meals that is on rotation quite often since it comes together so quickly. Often referred to as Mexican spaghetti, but also, so different than that. The best part about this recipe is that, with the exception of the noodles, you may already have the rest of the ingredients in your pantry and it is a one skillet wonder! Traditionally the noodles are browned up in oil to lend some flavor, since traditional pasta can handle that. Sweet potato noodles do not however and only puff up and splatter hot oil if you try to fry them.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- .5 cup.5 cup.5 cup Onion, sweet, diced
- 2 cloves2 cloves2 cloves Garlic, of, finely chopped
- 28 oz28 oz28 oz Fire Roasted Diced Tomatoes
- 8 oz8 oz8 oz Tomato Sauce
- 2 tsp2 tsp2 tsp Redmond Real Salt
- 2 tsp2 tsp2 tsp Ground Cumin
- 1 tsp1 tsp1 tsp dried Oregano, rubbed
- .25 tsp.25 tsp.25 tsp Chili Powder, chipotle
- .25 tsp.25 tsp.25 tsp Black Pepper, fresh
- 7 oz7 oz7 oz Salsa, can Herdez casera or your favorite
- 2 cup2 cup2 cup Chicken Broth, can sub vegetable broth
- 14 oz14 oz14 oz Green Chilies, canned, diced
- 3 whole3 whole3 whole Lime, juice of all three or as desired
- .5 oz.5 oz.5 oz Sweet Potato (Glass) Noodles
- .25 cup.25 cup.25 cup Cilantro, handful, roughly chopped (opt)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a warmed large skillet over medium heat, add avocado oil, swirling to coat bottom. Add onion and cook stirring occasionally until soft and edges are just getting browned and caramelized. Add chopped garlic and cook until fragrant, making sure not to burn.
- Add diced tomatoes, tomato sauce, salt, cumin, oregano, chili powder, pepper, salsa, chicken broth, green chilies and lime juice. Carefully stir together till well combined.
- If you like a smoother sauce, at this point you can use an immersion blender to puree until smooth. Otherwise, simply place japchae noodles in the sauce. Depending on the brand, they may not fit into the pan, so as they initially soften you will need to work them into the sauce with a wooden spoon or spatula. Work slowly as your pan is quite full at this point.
- Once the noodles are all tucked in the sauce, bring to a slow boil, then reduce to a low heat, cover and let it simmer for 10 minutes. Remove lid and give it all a quick stir and move those noodles around in the sauce. Now that they're all soft it will be much easier to get them evenly distributed in the sauce. Replace lid and simmer an additional 2-3 minutes or until noodles are done to your liking.
- Remove from heat, stir in chopped cilantro if using and serve. Garnish with additional cilantro, sliced green onions and a dollop of sour cream and serve with your favorite tortilla or chip.
