Stir Fried Glass Noodles (Edit recipe)

Have you ever had glass noodles? They have one ingredient...sweet potato starch and I am here to tell you that they are amazing! This Grilled Chicken & Glass Noodle Stir Fry is one of my favorite things to make on the Blackstone griddle. You can also cook it in a big skillet. This dish is a veggie lovers dream and you can use almost any kind of vegetable you like. I have also made this with steak instead of chicken and it was so delicious. This comes together quickly and easily and everyone including the kiddos will love it!  I promise!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place glass noodles in a bowl and pour boiling water over being sure to cover with water
  2. Drain after 10 minutes and set aside
  3. Toss chicken pieces with salt & pepper
  4. In a measuring cup mix together coconut aminos, sesame oil, rice vinegar, garlic, ginger & sesame seeds & set aside
  5. Heat grill and add all the other ingredients except noodles
  6. Cooking till chicken starts to get crispy on the outside and reaches 165° on the inside
  7. Mix everything on the grill
  8. Mix in glass noodles
  9. Pour sauce over and toss a few minutes
