- Fillet your salmon into four even portions, pat them dry, and season both sides with salt and pepper.
- Heat a tablespoon of olive oil in a nonstick pan over medium-high heat. Once it’s hot, lay the salmon in, seasoned-side down. Give it about 3 minutes per side, then pull it out and set it aside.
- Toss your onion and garlic into the same pan. Stir and scoop up all those golden bits left from the salmon.
- Sprinkle in your smoked paprika and stir fast. Don’t let it sit or it’ll get weird and bitter.
- Pour in the white wine if you’re using it and let it simmer for 1 minute until the alcohol cooks off.
- Add that 1/2 cup of Sturdy Marinara Sauce. Stir it up, drop the heat to low-medium, and let it simmer for 3–4 minutes.
- Slide the salmon back in and let it hang out in the sauce for 1–2 minutes. Just enough to warm through and soak up the flavor.
- Throw on some lemon slices and a sprinkle of fresh parsley. Serve it up while it’s hot.
