Peanut Butter Carrot Oat Cookies
If you’re looking for a small batch cookie recipe sweetened with fruit AND including a veggie, then these peanut butter carrot oat cookies are it!
These are perfect for littles since there’s no added sugar, they only have 4 ingredients (5 if you include baking soda 🙃), they are soft, vegan, and you can sub the peanut butter for seed or another nut butter if you have an allergy!
Ingredients
- 0.333 cup0.333 cup0.333 cup Salted Peanut Butter
- 0.25 cup0.25 cup0.25 cup unsweetened Applesauce
- 1 whole1 whole1 whole Carrots, shredded or finely chopped (about 3/4 cup)
- 0.5 cup0.5 cup0.5 cup One Degree Organic Oats
- 0.25 tsp0.25 tsp0.25 tsp Baking Soda

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything together in a large bowl.
- Drop cookies onto parchment lined baking sheet (these will not spread) and form into cookies.
- Bake at 350 for 12 min (you will see the edges starting to brown).
- Let cool for at least 10 min before eating (they will firm as they cool).
